Tousey Winery are thrilled to see a new cafe open up attached to the tasting room. With southern Columbia County now a hot spot for craft libations, Cafe Gerard is a welcome addition to the neighborhood, both for locals and tourists. Read their story below.
In June 2016, Chef Gerard Viverito and his wife Danielle started a pop-up at Tousey Winery showcasing the San Diego comfort food of his wife’s childhood: fish tacos! The seasonal pop-up was so loved by both Hudson Valley locals and visitors alike that now this “temporary” restaurant has joined forces with Kimberly and Ben Peacock as a permanent fixture at Tousey Winery.
Taco Thursdays will be a regular event in the warmer months where Gerard gets to distribute as well as utilize sustainable seafood in a casual environment. Friday night meals are served family-style to increase both the conviviality of the Café experience and to further recreate the comforts of home. Weekends provide fresh baked goods, locally roasted coffee, and a sweet and savory brunch leading into afternoon and evening rotating menus. While the ability to write a seasonal menu provides a creative outlet for Gerard he goes a step further by offering additional courses as a supplement to the menu featuring unique ingredients. The restaurant’s beverage service is in conjunction with Tousey Winery who produces award-wining wine locally sourced from their Germantown vineyard.
About the Chef
Gerard Viverito is a Chef Instructor at the Culinary Institute of America, specializing in sustainable seafood education. His previous experiences as a chef in California, Oregon, Caribbean, Asia, Spain, France and Italy, allowed him to expand his understanding of cuisine and culture that he now showcases at his cafe. In addition he is the Director of Culinary Education for PassionFish.org, a non-profit organization dedicated to teaching and promoting environmentally sound alternatives to endangered seafood species.
Having previously owned a wine bar in Rhinebeck that featured Tousey wines, Gerard formed a working relationship with Kimberly and Ben Peacock. A few years later Kimberly approached Gerard about doing a food pop-up at the winery during the summer months. With Gerard’s expertise in seafood and his wife’s hometown of San Diego, they created a fish taco pop-up that provided wine friendly food in a fun family environment. It became a popular local event and after enough customers asked if we could be there more often, the idea was hatched to form a café within the Tousey winery.
After spending years in the Hudson Valley and traveling around the world, Gerard and Danielle wanted to bring a café to the area that produced clean, honest food at a reasonable cost in a family friendly environment. We try and source all of our products locally and help support the farmers and producers in the area. Gerard has spent many years in many different types of kitchens and hopes to bring many of those styles through on a rotating basis.
